Kasu-jiru: miso soup made with plenty of warming sake-kasu (the lees from sake-making).
In this case the sake in question is Tenryo daiginjo, brewed in the uplands of Gifu Prefecture. Which, not coincidentally, is the same sake we were drinking – warmed as atsukan, of course.
We need all the hearty sustenance we can get on these chilly late-February nights.
