As if the wonderful Torishiki weren't already popular enough, now it's getting exposure all around the world – or at least on the routes served by Japan Airlines. My latest contribution to Skyward magazine is now in the JAL seatbacks.
So that's the perfect excuse for featuring Torishiki again here. And why not? After all, it's one of the very best in town!
Starting not with the chicken — you can see plenty of those particlar sticks in previous entries here… and again here… — but the brilliant atsu-age tofu, with its crisp skin, soft custardy interior and rich, succulent aroma of chicken fat…
And this shot, taken from perhaps the best seat in the house, where you can feast your eyes on the display case — while also watching Ikegawa-san at work, intently tending the coals and the sticks:
