kinmedai @ Fujiya1935

Kinmedai is back in season. What a superb fish — and the English name for it is absolutely right: splendid alfonsino. Especially when prepared with expertise.

Swooshes of garlic-laden egg yolk.  Sharply flavorful leaves. Flashes of floral magenta. Splendid indeed.
